Cater Care FSAI Level 2

Participants of this course will get a refresher on the key requirements of Food Safety & HACCP. Learners will understand what is required of them in terms of personal hygiene, they will also be tutored on temperature monitoring and on all processes involved with the safe production of food. Pest Control and Cleaning will also be covered as will legislation. All info is in line with the IS340: 2007 Irish Standard document, Hygiene in the Catering Sector.

    Overview:

    The aim of this programme is to provide learners with adequate training in the basic principles of Food Hygiene, HACCP Allergen Awareness and Food Safety Authority of Ireland Level 2.

    Objectives:

    On completion of the programme, successful learners are awarded a certificate from the Environmental Health Association of Ireland (EHAI). This certificate is valid for 5 years.

    Who should attend:

    This programme is designed for all food handlers, chefs and supervisors preparing food for public consumption (i.e. Café, shops, hotels, healthcare)

    Duration:

    8 Hours

    Content:

    The programme consists of a minimum of 8 hours, including an hour long examination. The core content of the programme consists of 8 sessions:

    1. Food hygiene – why bother?
    2. Food contamination
    3. Food delivery and storage
    4. Food preparation, cooking and service
    5. Personal hygiene
    6. Design and layout of food premises, pest control
    7. Cleaning
    8. Introduction to HACCP
    Assessment:

    1 hour examination
